Moroccan Flour (طحين مغربي)
Moroccan Tagine Recipe
Ingredients:
- 500g lamb or chicken, cut into pieces
- 2 medium onions, finely chopped
- 2 medium tomatoes, chopped
- 2 garlic cloves, crushed
- 1 teaspoon ground ginger
- 1 teaspoon turmeric
- ½ teaspoon cinnamon
- Salt and black pepper to taste
- 3 tablespoons olive oil
- A handful of green olives (optional)
- A handful of toasted almonds (optional)
- A little water or meat broth
- A pinch of saffron (optional)
Preparation:
- In a tagine or pot over medium heat, heat the olive oil and sauté the onions and garlic until soft.
- Add the meat and brown it on all sides.
- Add the tomatoes and spices (ginger, turmeric, cinnamon, salt, pepper), and stir well.
- Pour a little water or broth to partially cover the meat, then cover the tagine and let it cook on low heat for about one hour, until the meat is tender.
- 15 minutes before finishing, add the olives and toasted almonds.
- Serve the tagine hot with Moroccan bread or couscous.
