Moroccan Flour (طحين مغربي)

Moroccan Tagine Recipe

Ingredients:

  • 500g lamb or chicken, cut into pieces
  • 2 medium onions, finely chopped
  • 2 medium tomatoes, chopped
  • 2 garlic cloves, crushed
  • 1 teaspoon ground ginger
  • 1 teaspoon turmeric
  • ½ teaspoon cinnamon
  • Salt and black pepper to taste
  • 3 tablespoons olive oil
  • A handful of green olives (optional)
  • A handful of toasted almonds (optional)
  • A little water or meat broth
  • A pinch of saffron (optional)

Preparation:

  1. In a tagine or pot over medium heat, heat the olive oil and sauté the onions and garlic until soft.
  2. Add the meat and brown it on all sides.
  3. Add the tomatoes and spices (ginger, turmeric, cinnamon, salt, pepper), and stir well.
  4. Pour a little water or broth to partially cover the meat, then cover the tagine and let it cook on low heat for about one hour, until the meat is tender.
  5. 15 minutes before finishing, add the olives and toasted almonds.
  6. Serve the tagine hot with Moroccan bread or couscous.
